Explore 2019: Laughter at Failure

OK so y'all know I love baking and am pretty good at it, right? Well, this is what happens when you have a million things on your mind, wake up at 6am, and think, "Well, I know I have 68 things to do today but we really need pumpkin chocolate bread. There is no breakfast in this house!"

While I was making the batter, I said to Jon, "OMG I really should not be baking this early in the morning. I am having a hard time paying attention." I double checked all the ratios but what I forgot about this recipe in my morning haze was that when I double it (which I always do) I usually divide the batter across two big loaf pans (these beauties were gifted to me by my beloved Asha) + a couple of smaller gift-size baking tins. Because, so much batter!

Welp, I went down to check on the loaves this morning and thank goodness I thought to put them on a baking tray because they exploded and were overflowing because I forgot to split out some of the batter to extra smaller baking tins.

At first I was like, WTF Christine? ! and then I realized it was the perfect time to explore (my 2019 word) laughter at failure. Also? Jon and I agreed that all of the overflow that exploded onto the pan (which I thought to scrape out before they burned) were unbelievably delicious!
