Explore 2019 #212: Quick kimchi
It sounds weird but I feel as if I'm getting more Korean as I get older. And part of that has involved more experimentation in the kitchen. Today I used the crazy gorgeous daikon (did not realize it was purple inside!) + pickling cukes from our CSA to make quick kimchi for the first time ever. The paste was super easy and smells amaaaazing... can't wait to try it in a couple of hours!
