Explore 2019: CSA inspired Korean cooking

We recently joined a CSA and did our first pickup on Thursday and the produce is amazing! We largely selected our typical faves but I decided to grab some Asian eggplant, which we never buy at the store.

This afternoon I found a recipe for gaji muchim (soy-marinated eggplant) in my Koreatown cookbook and OMGGGGG. This recipe is super easy but look how gorgeous this dish is and it tastes SO LEGIT KOREAN. I'm now officially excited to experiment with more produce through the CSA!
