Embrace 2020 117/365: baking cleanout

Anyone have an awesome coconut flour based recipe to share? I just took 5 minutes to clean out the active baking item shelf... Intention was to pull out items to use up to avoid food waste, but a couple of the items I was planning on using expired in 2016. I've got great recipes that use the 1 to 1 and teff flours (look back to my recent pizza and seedy bread posts) and would love a great coconut flour recipe!
