Embrace 2020 107/365: super-seedy gluten-free bread

Where are my gluten-free friends at? One upshot of the pandemic grocery store experience is that it's resulted in some unexpected wins. For example, I learned that gluten-free no-boil lasagna strips are a thing (literally, they were the only thing on the shelves in the pasta aisle a few weeks ago) + it was easy to find teff flour because all the other flours were gone. #silverlining

The teff flour was for this super-seedy gluten-free bread. The name is accurate! If you like seeds and crunchy bits, you will like this bread! It's very satisfying and depending on what your palette is craving it's great on its own, with a pat of butter, or with PB&J on top. However, my edit next time will be to replace the nuts with additional seeds because due to Violet's tree nut allergy I have found myself super paranoid about handling this bread. Meaning, I am fastidious about anything the bread comes in contact with (cutting board, knife, toaster, my hands, etc). It's a little exhausting in the context of everything else I'm being fastidious about and I cannot bear the idea of triggering an accidental ingestion/reaction so I'll make that switch on the next loaf!
