Six Amazing Pies from The Book on Pie

OMG y'all we did it...6 pies in 24 hours! Helps to have a legit second chef (16yo Laurel) + meticulous helper (9yo Violet). Here's what we made: 1) roasted beets with herbed mascarpone + goat cheese; 2) sausage, caramelized onion, Boursin + herbs with a golden cheese crust; 3) honey/orange fig with cardamom lemon crust; 4) key lime coconut cream with classic butter crust; 5) cheesecake with pumpkin cookie crust; 6) ginger cherry with classic butter + gingerbread crusts.

The only fail was the gluten-free crust, which was crumbly and couldn't be rolled out. I replaced it with a classic butter crust and I will basically be eating all filling!

And to answer your question, yes, this is a crapload of pie for 4 people but baking with my girls is a major source of JOY + we will be doing sidewalk pie sampler drops to a couple of people today.
